Pi Day is coming up on March 14th, and we're celebrating by rounding up some of the best pie recipes out there. Whether you want to make a classic strawberry pie or a more unconventional butternut squash pie, these recipes are sure to satisfy any sweet tooth.

 

Classic Apple Pie
Ingredients:
6-8 apples
2 cups sugar
1/2 cup flour
1 tablespoon cinnamon
1 teaspoon salt
2 eggs
1 teaspoon vanilla extract
2 pie crusts
 
Direction:
1. Preheat the oven to 425 degrees Fahrenheit. 
2. Peel, core, and slice the apples.
3. In a bowl, mix together the sugar, flour, cinnamon, and salt.
4. In another bowl, whisk together the eggs and vanilla extract.
5. Add the apples to the dry ingredients and toss to coat evenly with the flour mixture.
6. Pour in the egg mixture and stir to combine well.
7. Transfer the mixture into a 9-inch into the pie crust, cover the pie with another payer of pie crust, And then coated it with cooking spray. Bake for 40 minutes or until golden brown on top and cooked through in the middle.

 

 
Lemon Meringue Pie
Ingredients:
2 eggs, separated
1/3 cup cornstarch
1/4 teaspoon salt
1/4 cup white sugar
1/4 cup water
1/4 cup lemon juice
1 tablespoon lemon zest
1/2 teaspoon cream of tartar
1 9-inch pie crust, baked
2 tablespoons butter, melted
1 tablespoon confectioner's sugar

Directions:
In a small saucepan, whisk the egg yolks with the cornstarch and salt. Add the sugar, water, lemon juice and zest. Cook over medium heat until it thickens and starts to boil. Remove from heat and set aside. In a bowl, beat the egg whites with the cream of tartar until stiff peaks form. Fold about 1/4 of the beaten egg whites into the cooled lemon mixture to lighten it. Then fold in the rest of the egg whites until well combined. Pour this mixture into the pie crust. Brush with melted butter and sprinkle with confectioner's sugar. Bake at 350 degrees Fahrenheit for 30 minutes or until set. Let cool before slicing and serving.

   

Chocolate Cream Pie
Ingredients:
1 (9-inch) pie crust, baked and cooled
1 1/4 cups sugar, divided
3 tablespoons cornstarch
3 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
4 cups milk, divided
4 tablespoons butter
4 ounces bittersweet chocolate, chopped
2 teaspoons vanilla extract
2 eggs, lightly beaten
1 cup heavy whipping cream
1 tablespoon confectioners' sugar
1/2 cup semisweet chocolate chips, optional

Directions:
Preheat oven to 350 degrees.
In a medium saucepan, combine 3/4 cup sugar with the cornstarch, cocoa and salt. Whisk in 2 cups of the milk and cook over medium heat, stirring constantly until mixture comes to a boil and thickens. Stir in the butter, chocolate and vanilla extract. Remove from heat and stir in the eggs. Pour into the pie crust. Bake for 20 minutes or until set. Allow to cool completely before topping with whipped cream and sprinkling with remaining 1/4 cup sugar and chocolate chips if desired.

 

 
Peach Pie
This is a classic recipe that’s perfect for a cold winter day. It’s easy to make, and the peaches give it a nice flavor.
Ingredients:
1 pie crust
3/4 cup sugar
1 teaspoon cinnamon
3 cups sliced peaches
1 tablespoon lemon juice
1 egg, beaten with 1 tablespoon water
2 tablespoons butter, melted
1 tablespoon flour

Directions:
Preheat oven to 425 degrees Fahrenheit. Mix together sugar, cinnamon, and flour in a bowl. Stir in peaches and lemon juice. Pour mixture into pie crust. Brush beaten egg on top of pie crust and sprinkle with sugar-peach mixture. Drizzle melted butter on top of pie crust. Bake for 15 minutes at 425 degrees Fahrenheit then turn oven down to 350 degrees Fahrenheit and bake for another 35 minutes or until golden brown.
